hmm. ive never made a buddha bowl. can you use sweet potato for a base? how about a layer of cooked sweet potato, a 1/3 beyond burger crumbles sauteed with taco seasoning, a 1/3 cole slaw (vegan mayo of course). a 1/3 garlicy sauteed spinach and a sprinkle of pine nuts and chopped cilantro
