Try this version of a tuna salad sandwich...sweet and savory!

1 large can albacore white tuna, flaked
1 cup finely diced celery
1/2 cup finely diced red onion
3/4 to 1 cup Miracle whip salad dressing, or mayonnaise.
4 coarsely diced sweet baby gherkin pickles for each two sandwiches.
slice bread, your choice.

Mix all ingredients except bread and pickles thoroughly.

Lay bread slices on a plate, and top each slice with 1/3 to 1/2 cup of tuna mixture.
Top with sweet chopped baby gherkin pickles, about 2 scant Tablespoons each. Cut each sandwich in half. Serving size is 1/2 sandwich. Serves 7 to 8.

The baby gherkins are almost sweet and sour on their own, and this, combined with the tuna and onion flavors, kicks it up a notch.
Recently, I've begun adding hot sauce to tuna salad - kicked up another notch (mine - tuna, mayo, vinegar, sugar, celery, chopped hardboiled egg, diced onion, sweet relish & hot sauce to taste).

@Mamapolo2016 Mmmm! I thought about using my Frank's Red Hot, but it is a little too vinegary for me with the pickles, too. These sweet baby gherkins are strange...they are sweet and vinegary at the same time, and some them almost taste spicy hot...almost.

But your sandwich sounds really good!
Red pepper flakes in at least some pickling spices@4meAndyou

I do that and add a pinch of cayenne and fresh sweet peas.

It is interesting on what you find out when you dig into your history.

You will need to make a trip to England to research the records at the abbeys. @4meAndyou

@IowaDeviant My Dad did that when I was thirteen years old. I remember primarily feeling humiliated that he was scraping lichens off old tombs with a penny...😉

That is dedication @4meAndyou

Do you get piccallili in the US
4meAndyou · F
@gjp63 I just found the sweet version at Walmart, of all places, for 27.97, with a version by Heinz for 16.97, and for $2.82 I can get green tomato piccallili by Howards, not Haywards.😂

The Heinz is ok.

@gjp63 I looked up a recipe in case I am feeling like a cheapskate on the day I try it...😉

I like tuna and piccalilli. 🙄

@gjp63 I used to have chives in my tiny garden when I owned a townhouse. You have to bury a 5 gallon bucket with the chive roots inside or they will take over! But I agree, I love them, too. I had garlic chives also, which have a little more bite.
gjp63 · 56-60, M
Ooh garlic chives. Not heard of them. I have mine in a pot too. The flowers are pretty too which is a bonus.

@gjp63 Someday...I would love to have giant Allium in a garden plot. The flowers are just like chives, but enormous!

Looks good.

Would substitute the tuna for something else. Crab sounds good.
4meAndyou · F
@Heartlander Mmmm...FRESH crab...not canned.
