Try this version of a tuna salad sandwich...sweet and savory!

1 large can albacore white tuna, flaked
1 cup finely diced celery
1/2 cup finely diced red onion
3/4 to 1 cup Miracle whip salad dressing, or mayonnaise.
4 coarsely diced sweet baby gherkin pickles for each two sandwiches.
slice bread, your choice.

Mix all ingredients except bread and pickles thoroughly.

Lay bread slices on a plate, and top each slice with 1/3 to 1/2 cup of tuna mixture.
Top with sweet chopped baby gherkin pickles, about 2 scant Tablespoons each. Cut each sandwich in half. Serving size is 1/2 sandwich. Serves 7 to 8.

The baby gherkins are almost sweet and sour on their own, and this, combined with the tuna and onion flavors, kicks it up a notch.

@gjp63 Sometimes the oddest things work. Before dairy became my enemy, I tried the red onion and celery combination with tuna and lime flavored non-fat yogurt instead of mayo, to save on calories, and that wasn't too bad, either. The yogurt was sweet, the onion offset the sweetness, and the lime went well with the tuna.

Love red onion, and chives. Have some chives in the garden. It's nice to go out and cut some fresh.

@gjp63 I used to have chives in my tiny garden when I owned a townhouse. You have to bury a 5 gallon bucket with the chive roots inside or they will take over! But I agree, I love them, too. I had garlic chives also, which have a little more bite.

Ooh garlic chives. Not heard of them. I have mine in a pot too. The flowers are pretty too which is a bonus.

@gjp63 Someday...I would love to have giant Allium in a garden plot. The flowers are just like chives, but enormous!
