I Like To Share Recipes

Try this version of a tuna salad sandwich...sweet and savory!

1 large can albacore white tuna, flaked
1 cup finely diced celery
1/2 cup finely diced red onion
3/4 to 1 cup Miracle whip salad dressing, or mayonnaise.
4 coarsely diced sweet baby gherkin pickles for each two sandwiches.
slice bread, your choice.

Mix all ingredients except bread and pickles thoroughly.

Lay bread slices on a plate, and top each slice with 1/3 to 1/2 cup of tuna mixture.
Top with sweet chopped baby gherkin pickles, about 2 scant Tablespoons each. Cut each sandwich in half. Serving size is 1/2 sandwich. Serves 7 to 8.

The baby gherkins are almost sweet and sour on their own, and this, combined with the tuna and onion flavors, kicks it up a notch.

I do that and add a pinch of cayenne and fresh sweet peas.

@IowaDeviant Wow...the peas are an interesting choice. I'll bet you have a kitchen garden. I like cayenne, too.

They are interesting in a good way.

I wish I had one. Right now it is hard to find the time to set everything up and make sure it is watered and fed correctly. @4meAndyou

@IowaDeviant You are from Iowa? My Dad is buried in Creston. That is where my family purchased their farm when they immigrated here from England.

I am, I live in the Des Moines area. Creston is about an hour to the sw of here. That is cool that you can trace your heritage. @4meAndyou

It is interesting on what you find out when you dig into your history.

You will need to make a trip to England to research the records at the abbeys. @4meAndyou

@IowaDeviant My Dad did that when I was thirteen years old. I remember primarily feeling humiliated that he was scraping lichens off old tombs with a penny...😉
