@Dlrannie I had celery root in mashed potato puree and it was fabulous in fact I think it was mostly the root and just a little bit of mashed potato to give it some substance it was one of the best tasting things I've ever had. Something you wouldn't expect but so delicious! I'm very curious about celery remoulade now

@LaLumieri Celeriac is also nice cut in to chunks and roasted with potatoes and beetroot. Celeri Remoulade is a classic French salad dish vaguely reminiscent of Coleslaw only much nicer 🙂😋😋. There are plenty of recipes to be found on the net 🙂🐼🥢

Geesh all these starchy tubers and few real veggies.

Spinach.
Peas.
Legumes of all kinds (beans)
Broccoli
Cauliflower
Lettuce of a thousand kinds.
Alfalfa, wheat and oat sprouts.
Cucumbers (technically a fruit like tomato)
Parsley
Herbs of all kinds.
Collard greens.
Celery stocks.
Corn

Not in the vegetable category:
Carrots
Potatoes
Celeriac (celery root)
Bok choy
Onions
Parsley root
Yams/sweet potatoes
Radishes

They all grow underground. And are starchy roots.

Fiddlehead ferns. Common in Korean cuisine. In continental cuisine. At least where you have fiddleheads.
