Do you have any good vegan or fat free recipes?

I started a no fat, sugar free diet, per my surgeons orders, and I'm loving it so far! However, I'm running out of ideas for my veggies.
I still eat lean meat, but I focus more on my veggies for my meals.
I've never focused so much on cooking clean meals, so I'd love any guidance!

If you get stuck also try the McDougall Cookbook and when you search for things, type in tag words like:

hclf vegan recipes
high carb low fat vegan recipes
starch solution recipes
Candida diet recipes (this diet may or may not be vegan depending)
Candida diet vegan recipes
Macrobiotic vegan recipes

You could also search for something specific like "HCLF vegan soup recipes" or "HCLF vegan pasta recipes" those help also.

Just play around with words like that and you'll find all kinds of stuff.

I'm going to give you a list lol but I think I'll leave another comment because this one is kind of long. I've just went vegan and just seeing how it goes for now (like literally yesterday lol.)

I went to The Vegan Solution, she sells meal plans that are very cheap, like her 28 day one is only 12 dollars and available as a PDF. If you don't want to do that, she has a lot of "what I eat in a day" videos on her youtube account, many of them are really easy meal ideas.

Breakfast: Oatmeal with frozen berries, peanut butter and/or sugar free jelly (for no fat I'm sure you could do other options aside from the peanut butter)

She's also a big fan of oatmeal and "nice cream" which is frozen fruit blended with any type of thing like cocoa powder or vanilla. Then you put the nice cream on top of the oatmeal and it's sort of like a healthy sweet treat.

Lunch: Baked Sweet Potato fries and large salad

Dinner: Burrito Bowl with lettuce, brown rice, salsa, beans, avocado etc..

I always advise against cutting out any one macro. Fats are important.

It is tricky to design meals that are nutritionally appropriate for vegans. Maybe see a nutritionist for a consult.

Pre-heat the oven to about 180 celsius.

Chop up a cauliflower into bite-size pieces and put into a baking tray.

Crush one teaspoon of coriander seeds and sprinkle over.

Crush two or three cloves of garlic with some salt to make a paste. Add some olive oil. And mix.

Pour the paste over the cauliflower and mix it all around.

Season well and cook for about thirty minutes. Keep an eye on it to stop burning. But a little bit of browning adds to the taste.

Poke it with a fork to check. A bit of firmness is good.

Leave to sit for a few minutes and then eat with whatever else you fancy.

I did make something similar last night.
Parsley, lemon juice, garlic, and onion powder rub on a whole head of cauliflower...came out great.

During the time my daughter was training for a body-building competition, i observed her eating habits while staying with us for several days. Aside from a lot of lean protein, there were veggies at every meal including breakfast/ i've adopted that approach myslef. The Mediterranean Diet recommends half the plate be vegetables.
If you keep a lot of frozen veggies (and fruit) around it is simple to quickly cook a portion and choose from a variety. of course, fresh is best but if you have three meals a day, the frozen can work for one or two of them; plus have an additional vegetable instead of one.
