I know that people make the often very difficult decision, for different reasons. Sometimes it's for health reasons, which answers the question without further commentary.
More people, I'm pretty sure, stop being consumers of animals and their 'products" for environmental and or animal suffering reasons. I think the point of being more at peace with oneself by trying to do less harm, is one other than self-righteousness.

I don't see why it is my place to judge anyone for their eating choices.

@Bumbles I don't know if it is every vegan who judges, or a small group of fanatic level vegans who judge. In which case, there are fanatic levels in every thing.
in theory, it's more economical and less impactful on the environment. in practice it tends just to be that other.
@stound how is the absence of animal agriculture worse for the environment than having animal agriculture?!

You can also have biodiversity without animal agriculture
Moreover, the negative impacts of cattle ranching today are in no way offsetting anything with regard to, say, monocultural wheat fields or monocultural vineyards or monocultural paper pulp tree plantations
Slashing and burning Amazon rain forest to create more cattle ranches is not somehow [i]helping[/i] the enviroment or climate, it is doing the exact opposite, as tropical rainforests are a lot more effective at absorbing carbon than, say, temperate conifers

Staying skinny? It's hard to gain weight without things that adds fat in foods. It's also less products for the body to process or store as there's almost no fat, so your body stays healthier.
