What’s the point of being vegan other that feeling self-righteous?

in theory, it's more economical and less impactful on the environment. in practice it tends just to be that other.

The absence of animal agriculture does not automatically mean monocultural plant agriculture

You can also have biodiversity without animal agriculture

Moreover, the negative impacts of cattle ranching today are in no way offsetting anything with regard to, say, monocultural wheat fields or monocultural vineyards or monocultural paper pulp tree plantations

Slashing and burning Amazon rain forest to create more cattle ranches is not somehow [i]helping[/i] the enviroment or climate, it is doing the exact opposite, as tropical rainforests are a lot more effective at absorbing carbon than, say, temperate conifers
