Best apple pie I ever had was made with Northern Spy apples. I never see that variety anymore. These days I make do with a mix of Granny Smith & Cosmic Crisp. I think I'll pass on your Black Diamond. Regardless of the alleged threat to my manhood, the right degree of tartness, plus flavor complexity, is what makes a good pie, and sweeter than honey doesn't sound like a good start. BTW, do you put a cooked filling into a pie, or just raw slices? I got converted to the cooked filling method a couple years ago and it's mighty fine!
