To me, a BBQ requires meat to be seasoned and slow cooked for hours until it is super tender or almost falling apart, then served with a special sauce. A cookout may be throwing some burgers or steaks on a grill and cooking them for a few minutes until done.

The absolute best BBQ in the world was a place called The Tumble In in Laredo Texas, on the Zapata highway. Their sauce was so good a sauce only sandwich would have been better than most BBQ anywhere else.

When asked how they made the sauce they explained that the last step was to slow cook a chuck roast into the sauce until it fell apart, like slow cooked over a few days.

@Heartlander Texas has good BBQ, but I grew up in Georgia where BBQ meant pulled pork, and it's still my favorite. I smoke my own and have my own sauce.

@exexec the KC area is about half and half probably because the north south divide runs just a few miles east of here. At about Blue Spring MO you have one foot in the south and the other in the north. How do you know which? Stop at a convenience store and look at their snack rack If fried pork rinds outnumber potato chips you are in the south.
