I know a few. Acorns, for example, are inedible because of their high tannin content, but if you smash them and then wrap them in a piece of cloth or bag, find a stream or any moving water, and tie them in the water, the next morning all the tannins are gone, and the acorns can be boiled to make a nutty tasting mash.
