isn't this in many ways pork v. beef? at it's lowest level, anyway.

@dirge mmm....I don't think so....Sausage and pork are two different things really....as are sos and beef....great observation though
@originnone just in my experience, most [there's exceptions to prove the rule, as in most things] sausage has a moderate to large pork component, and all SOS I've ever seen/heard of is made with ground [or perhaps chipped] beef [which isn't to say I'm an expert, just from what I've seen]. both then use the grease to make a gravy, and the difference between pure biscuit and a toasted slice of bread is mostly academic.. they're more similar than dissimilar, I'd say.

@dirge I often serve them over eggs.....same gravy is accurate. I use a lot more pepper in SOS though.
