It will once opened unless kept in the refrigerator with the lid replaced.

The first thing that happens is usually mould growing on its surface. It can also start to ferment - an early sign of that can be a distinctly fizzy taste and wine-like odour.

It may also, in time, crystallise. That is no going "bad" in the decomposition sense, but the sugar crystallising. It may still be edible but not easy to spread!

I had some I bought at Family Dollar get moldy in about a week. I had opened it and it was in the fridge.

Yes, it goes mouldy

@SW-User maybe it depends on the type of jam?
@GuyWithOpinions All jams, jellies, preserves, and marmelades, are all pretty much made the same, cooked on high heat with sugar and water.

It doesn't. It is loaded on sugar, which is a natural preservative.
@SW-User I despise pseudoscience, specially when it comes to food, too many people die feom food poisoning each and every year from bad information. Sugar should never be used as a preservative, it's a sweetner.

@NativePortlander1970 I am not a fan of people behaving with attitude and sarcasm. There is no point engaging in this matter.

If you have never seen sugar itself grow mold ...then you need to check your 'science'.

Besides that...I am not invested in what anyone believes. X
@SW-User When properly stored in air and moisture tight containers sugar can last a fairly decent time, but unlike salt, if left on the counter, it will absorb moisture, the air containing microbes will infiltrate, and it will grow fuzzy over time.
It won't stay fresh forever.

Sounds like you're in a jam
Yes, it will mold.

Salt and sugar are preservatives

@SW-User yeah but they still dont make food last forever
I once bought a jar of Smucker's strawberry preserves, still over a year from expiration, when I opened it the jam was an experiment in science, at least a quarter inch of fuzzy green on top.
