My grandmother, who taught me, believed that food should only be work for the cook.
All the dîner should have to do is eat it.
I’m certain that’s what she learned in Tremé, but she cooked primarily for family.

@bijouxbroussard I agree. But the woman who left the shells on was farm-trained, still raised her own veggies, etc., in addition to being a teacher. I was surprised that she'd left the shells on, but it seems that's how she was raised to cook it growing up down South.

@ChipmunkErnie Tremé is also down South; one of the oldest black Creole neighborhoods in New Orleans.
