I didn’t make "Hoppin’ John" for New Years Day this year. I meant to, for my father, but ended up cooking something else. So possibly that’s why I’ve been wanting some. I have a bag of black-eyed peas in the freezer and some brown rice, green onions and some peppers. I just need to make a roux (sauce).
With some buttermilk cornbread it should be a good supper.
