I’ve been having a craving…

I didn’t make "Hoppin’ John" for New Years Day this year. I meant to, for my father, but ended up cooking something else. So possibly that’s why I’ve been wanting some. I have a bag of black-eyed peas in the freezer and some brown rice, green onions and some peppers. I just need to make a roux (sauce).

With some buttermilk cornbread it should be a good supper.

That sounds great. What kind of roux do you make to go with that?

I'm appreciating rice-and-legume dishes more and more these days.
@DrWatson Chicken stock, garlic and onion powder; cumin. Sometimes I add a little flour.
