My all time favorite is French Canadian yellow pea soup with Carando ham. Carando ham has a VERY special flavor, and we can only find it here once a year.
It's a very special recipe that calls for a turnip, carrots, celery, onions, summer savory, bay leaf, salt, pepper, and, of course, dried yellow peas...but without the Carando ham it's just not the same.
