I take it a step further and listen to Korn as I make it.
That growling sound from Freak on a Leash is remarkably similar to the sound I make as I eat the cornbread, now that I think about it.
(And real answer - no whole corn, yellow corn meal, yes buttermilk. And sometimes cheat but not with Jiffy, there's a Costco one whose name I can't remember and it's in the other room all the way over there.)

I grew up on some Jiffy! It was one of the first things I could make by myself. My mom was a working, single, hamburger helper mom lol I would eat so much cornbread until one day she told me they fed cornbread to hogs to fatten them up........
I rarely eat cornbread even though it's so good! Never make it because I'd eat too much.

I haven’t had cornmeal in my house for years. When I get a hankering I go this route
I substitute melted butter for oil and it’s actually pretty heavenly.

I usually cheat because it’s less mess. But! I will add stuff to the Jiffy mix….cream corn or chopped green chilies w/ some jalapeños and cheese. It just depends on what sounds good.
Always buttermilk!
Also, I prefer yellow cornmeal and the bread sweet. I can make white with unsweet though…it taste like goop.

@Crazywaterspring Yours sounds delicious. I’m much more used to savory cornbread, too. And I’ve always loved buttermilk over it, and greens, as a supper dish. The first time I ever had Jiffy was an aunt I mentioned in one reply. 😄

I really like Jiffy lol Nothing has changed except the price since I was a kid. My grandma used yellow cornmeal and pork cracklins.

On a related note, I do not like when I am at a restaurant and their corn bread has whole pieces of corn in it. I want bread not vegetables! It also ruins the texture and flavor.

🤣 always just used Jiffy like my mom. I can’t imagine how badly I could mangle trying it from scratch. 😅

@JustNik It isn’t that hard Nik. If I don’t have a Jiffy box I usually have everything g for a scratch pan.

@JustNik My aunt used Jiffy, with buttermilk and added corn, which we children loved. Our grandmother kept a box of Albers White Corn meal in her pantry, and while she did use buttermilk, it wasn’t as cake-like as our aunt’s. I had saved a piece from visiting the aunt and returned to the grandmother, who said gently that it was corn "pone" and more of a dessert. Somehow I knew not to repeat that to my aunt. I ate and enjoyed all of it. 😅

I use the recipe on the box of yellow cornmeal. I like it better than the mix and it’s really not any more work.

@Harmonium1923 As long as you’re pouring it into an hot iron skillet with melted bacon grease you really cannot go wrong.
