@Lilymoon a lot has to do with what you cook it on.

@Lilymoon You cook it slow in a low oven, and then just before it's cooked to your liking, you sear it in a pan.The idea is it leaves more room for error, and cooks the meat more evenly.
I always seem to make steaks tough. This helped fix that.
I wish I knew what I was doing wrong. But every time I try to pan fry a steak, I wreck it .

@NOS4R2 Pat dry your steak after leaving it at room temp for 2 hrs. Salt & Pepper it. Get your pan like wicked hot and put a little oil and little butter in it. Drop your steak in and sear that bad boy for at least 2 minutes pressing it into the pan, flip and repeat and then drop in garlic, and a healthy dose of more butter and then tilt the pan and start basting. flip and repeat, extract it let it sit for ten minutes and voila!

@Lilymoon I get dressed for the cold and, if i want a steak, i use the outdoor grill. Even when we lived in Iceland, I would BBQ in galebfircevwindes!
