Eggless War Cake

With food shortages looming on the horizon, I remembered seeing this recipe in my family's cookbook. During WWII, food was rationed, and eggs were scarce. There were many, many different "War Cakes'

Here is ours:

1 cup raisins
1 cup sugar
1/2 cup lard
1/1/4 cup water
2 tsp. cinnamon
1/2 tsp. cloves
1 tsp nutmeg

Boil these ingredients together for five minutes. Cool.

in a medium large bowl, mix together,

2 cups flour
1/3 tsp salt
2 tsp soda

Preheat oven to 350F

Add cooled boiled ingredients to the bowl and mix well.

Spray a loaf pan with non stick cooking spray, and add the batter.

Bake 45 minutes, then test with a toothpick. If the toothpick comes out clean, it's done. If not, bake an additional 15 minutes.

You can use flax meal and water to substitute for eggs, I have used that in pancakes
