Eggless War Cake

With food shortages looming on the horizon, I remembered seeing this recipe in my family's cookbook. During WWII, food was rationed, and eggs were scarce. There were many, many different "War Cakes'

Here is ours:

1 cup raisins
1 cup sugar
1/2 cup lard
1/1/4 cup water
2 tsp. cinnamon
1/2 tsp. cloves
1 tsp nutmeg

Boil these ingredients together for five minutes. Cool.

in a medium large bowl, mix together,

2 cups flour
1/3 tsp salt
2 tsp soda

Preheat oven to 350F

Add cooled boiled ingredients to the bowl and mix well.

Spray a loaf pan with non stick cooking spray, and add the batter.

Bake 45 minutes, then test with a toothpick. If the toothpick comes out clean, it's done. If not, bake an additional 15 minutes.

Cool stuff. Can I replace lard with cooking oil?

I think I've seen it in the supermarket before. I assume shortening/lard gives the cake a different texure than oil 🧈@4meAndyou

I love raisins more than grapes so I guess I will try once I get my hands on the shortening. It's actually an intriguing recipe bc it's old + you boil some ingredients first which is unconventional for a cake + no need to whisk just mix lol

You can use flax meal and water to substitute for eggs, I have used that in pancakes

@SW-User No. I don't like raisins...but if you will notice, this recipe also uses NO butter!

@4meAndyou Well, I just might give this a try anyway...somebody has to try and see how it goes. lol
As for the nonstick spray, I have a Misto olive oil sprayer. It is reusable and easy to pump to spray like the canned ones... you just quit buying cans that are throw away.

@SW-User Awesome idea!!! The non-stick spray I have at present is actually olive oil non stick spray anyway, and it is MUCH healthier than a bunch of chemicals.
