Yes. Mine are always a little crunchy around the edges and gooey soft in the middle. However ever long the package or recipe says to bake the cookies pull them out 2-3 minutes early bc they'll keep baking on the pan anyway as they cool off.
I made some lemon cornmeal crisps Saturday evening and they were excellent, very crispy texture. I don’t bake as often as I used to because I’ll gain weight if I do.
