Ugh my pancake looks like steak

I really wanted chocolate in pancakes but all I had was hot coco mix. I don't know what happened when I flipped it. Fell apart and took the form of steak. Maybe it's because the pancake mix is slightly expired. Well hopefully it will still taste ok.
