@meggie The boy has a book for writing recipes in and wants me to write down the favorites of his that I have made for him. I need to start doing that. I have never made scones but want to do it. I imagine they’re very much like American biscuits but with more interesting ingredients added to them.

I'm not sure what acorn squash is but it sounds really yummy the way you make it. I'm going to have to Google now to see what the British equivalent is.

@PatientlyWaiting25 Acorn squash are smaller, more fibrous and less dense than Butternut Squash. Easy to cut open and scrape the seeds out and fill and roast.

@cherokeepatti I think I will try with a butternut squash, I do cooking apples baked and filled and they are lovely. I never thought of using squash before.

@PatientlyWaiting25 I started buying acorn squash in the 1980’s. I didn’t have a recipe so I just made my own. I had just gotten a microwave oven and would fill them with raisins, brown sugar, cinnamon and butter and cook them in the microwave. They cook much quicker that way and the sugar and raisins don’t scorch. Have to be careful roasting in the oven. Can put the butter and cinnamon in but those raisins will scorch if they are included at the beginning. I think almonds and pecans would also be good in them.

@4meAndyou I am making salad with some chicken on it tonight. Not feeling like the Domestic Goddess that I am today. It’s chilly again and I’ve snuggled up with my blankie a good part of the day. Will go get my labs done and visit with my oncologist tomorrow and I don’t want to wash a bunch of dishes. I need to go to sleep earlier tonight.

@Magicianzini I have some butternut squash which I love to roast as well. I am planning on making Butternut Squash-Apple Soup soon. I need to get as much beta-carotene as I can into my diet.
