I still have serious reservations about green olives stuffed with pimiento, ever since being a kid.

It's a sight thing mostly. Not so much a taste thing. Though there's the vinegar taste in pimento that can be associated too. 😖

Not a huge fan of vinegar either. Though with some things it's alright.

Those red pimento things are yuck and the vinegar or whatever they ferment in is even worse.

I don't drink martinis, and I don't eat them on my pizza, so I don't buy them too often.

BTW, what is their function in a martini? Decoration?

Mediterranean olives. Yes. Rubbery olives? No.

I made some tonight. Chopped up Kalamata olives, with diced, pitted and strained tomatoes, finely diced red onions, with olive oil.

@Northwest the rubbery ones are fast cured using sodium hydroxide ( aka lye ) to take away the excessive bitterness.

The best Mediterranean ones use salt and it takes days to weeks to cure them to a correct fitness and palatable taste.

Generally those that have highly sensitive taste function in the bitter ranges don't like olives and some even have allergic reactions when eating them.

I know this fact because I can't eat them and many other bitter foods.

Olives are delicious! I prefer green varieties to black, but I'll eat any. I like just taking the jar of pimento stuffed olives and eating a few by themselves.
