Instructions
In the bowl of a stand mixer, combine warm milk, yeast, sugar, salt, butter, and eggs. Add in flour. Using a dough hook, turn the mixer on to a low speed.
Once the flour starts to incorporate into the dough, increase the speed to a medium range. Add more flour as necessary so that the dough pulls away from the sides of the bowl. The dough mixture should be tacky, but not stick to your hands. It should be soft. Add more or less flour until the dough reaches the desired consistency. The amount of flour you add in bread making is always an approximation and you should go by feel.
Transfer the dough to a lightly greased mixing bowl. Cover with a towel and let rise until double in size, about 1 hour.
Lightly grease a baking sheet. Punch down the dough and roll into a 12inch by 18inch rectangle.
Brush the dough with 1/2 cup melted butter. In a small bowl, combine the brown sugar and cinnamon. Sprinkle on top of the melted butter. Roll up tightly lengthwise so you have one long roll. Use plain dental floss or a sharp knife to cut the dough into 12 one-inch slices.
Place the slices onto a lightly 9x13 pan. Cover and let rise 30 to 45 minutes.
Preheat oven to 325 degrees. Bake the rolls for about 14 minutes, until just kissed with brown on top.
While the cinnamon rolls are baking, make the cream cheese glaze by using a hand mixer to whip together cream cheese and butter in a bowl until light and fluffy. Whip in powdered sugar and vanilla extract. Add enough milk to achieve a drizzle-like consistency.
Frost the rolls while still warm. Serve immediately or cool and store. Stays good for 4 to 5 days@Spoiledbrat

K - breakfast - butter a deep microwave bowl - bottom & 2 inches up the sides. Break two eggs into it & scramble with a fork. Cook 1 min. (Make toast while you’re waiting) Stir, add cut up ham, or pepperoni, or cooked bacon. Sprinkle shredded cheese on top. Cook another 20 sec or till cheese melts. Slide your omelet out, put on toast, salt & pepper and hot sauce if you like it.

Easy Baked Fish

1 or 2 fish fillets, about 1/2" thick
2/3 cup melted butter
1 cup Panko bread crumbs
Lemon juice

Preheat oven to 375F. Line a baking sheet with aluminum foil and spray with non stick cooking spray.

In a covered medium sized microwavable bowl, melt the butter for 1 minute and then stir in the Panko bread crumbs.

Place the fish on the baking sheet, and sprinkle with the fresh juice of 1/2 lemon, OR sprinkle with 1 to 2 Tablespoons bottled lemon juice.

With a tablespoon, spoon the buttered Panko crumbs over the fish to cover all of the exposed fish.

Bake 20 minutes for fish 1/2" thick like cod or pollock or haddock. Bake 15 minutes for thin fillets like sole or tilapia.

Serve with rice pilaf and fresh thin steamed asparagus spears and a slice of lemon if you used fresh lemon.

Fast Ramen Soup

1 thin boneless pork chop
1 package ramen pork flavored noodles, smashed before opening package
2 green onions, sliced
1 egg
Sesame oil

Remove the fat from the boneless pork chop. If you don't like pork, substitute boneless chicken breast for the pork chop and use chicken flavored ramen noodles.

Sear the pork on both sides in sesame oil. Remove to cutting board and slice the pork into thin strips, then cut those strips into thirds. Make sure pork is white and well done, not pink.

In a large microwave bowl, cook the noodles according to package directions, then when done immediately add the sliced green onions and the egg. Whisk with a fork to cook the egg in the hot broth, then add the pork.

Makes a hearty noodle dish. Serves 2.

Eggs, the easiest and quickest high protein meal you can make. If you have cheese you can make cheesy scrambled eggs. If you have veggies you can make an omelet. Boil em, fry em, scramble em...
