Easy Baked Fish
1 or 2 fish fillets, about 1/2" thick
2/3 cup melted butter
1 cup Panko bread crumbs
Lemon juice
Preheat oven to 375F. Line a baking sheet with aluminum foil and spray with non stick cooking spray.
In a covered medium sized microwavable bowl, melt the butter for 1 minute and then stir in the Panko bread crumbs.
Place the fish on the baking sheet, and sprinkle with the fresh juice of 1/2 lemon, OR sprinkle with 1 to 2 Tablespoons bottled lemon juice.
With a tablespoon, spoon the buttered Panko crumbs over the fish to cover all of the exposed fish.
Bake 20 minutes for fish 1/2" thick like cod or pollock or haddock. Bake 15 minutes for thin fillets like sole or tilapia.
Serve with rice pilaf and fresh thin steamed asparagus spears and a slice of lemon if you used fresh lemon.
