A typical conversation with my brother…

(None of this was serious, btw. Mostly me making conversation.)

Me: I hate that I alway end up getting too much buttermilk when I’m making cornbread. It goes bad and I have to throw it out.

Him: What, the cornbread ? I’d take that off your hands.

Me: No, the extra buttermilk. It doesn’t seem to keep as long as regular milk.

Him: Seriously, how do you know when buttermilk has gone bad ? Is it less sour ?

Me (laughing): No, trust me, it’s worse.

Him: But you’ve always liked buttermilk to drink, too, right ? So drink it before it goes bad.

Me: I always worry that I won’t have buttermilk when I get ready to make more cornbread or pancakes.

Him: Sounds like that’s happening anyway, when it’s gone bad. So at least if you’re drinking it, it’s not going to waste, right ?

Me: Okay, I feel kinda dumb now.

Him: That’s what I’m here for.

Me: I’m hanging up now.

Him: I’ll be in your city tomorrow…

Me: Brunch ?

Him: Yes, please. 😄

Me: See ya. 🍽

I totally get your reasoning. I do the same with regular milk. As for buttermilk, I recently asked the same question your brother did on Reddit just this year. How do you know when it's bad when it already smells bad when you get it. The consensus was that it's not bad until it's bad. And don't go by the expiration date. I was told to shake it up before use, and if it comes out lumpy, it's bad. One person even said that they have been known to drink a glass of Buttermilk that has supposedly 6 to 8 months old. I can't even drink it when it's fresh but I do like it as a flavor in some of the things that I make.

About pancakes, do you ever fold meringue into yours? My mom used to do that. They were delicious. Every time I try to do it, I overfold and lose all of the properties of the meringue

You still have a mighty good point though i dare say, i think they sell the buttermilk in too large containers so there will be wasting, it's the system man!!
