To not get splashed with hot oil or butter or other ingredients if cooking, not get splashed with drops of melted metal if a welder or smith, to have an extra layer between your junk and food if you're a waiter, to not get wet if you're a dishwasher, to not get too dirty if you're a butcher or fish salesman...
