Here's a salad I made

I made it to cover basically everything you need

Recipe:
Lettuce finely chopped
Spinach
Red onion
Cucumber
Steamed veg
Chicken or fish
Blackberry/blueberries
Black olives
Pomegranate seeds
Usually cashews or diced avocado but I didn't this time
Roast half a sweet potato if you want to add complex carbs

Dressing is honey, mustard (Dijon) with white wine vinegar and olive oil

Tips for prep:
- Cut your cucumber in half and gently remove the seeds and pulp, slice at a wide diagonal angle for long slices.

- throw your berries in the pan or tray while it's hot to melt them just a little bit

- if you chop lettuce very finely it sits better and you get more height and better texture

-if you want your chicken tender then lightly sear, add a splash of boiling water and cover it for a couple minutes. Or just roast it properly ✌
