I make a very succulant orange dill salmon, salt, pepper, and use fresh dill on the filets or steaks then brown the flesh side in real unsalted butter, flip to the skin side and add one half cup of freshly squeezed orange juice and let it poach until flakey, remove the salmon from the skillet then reduce the rest of the oj into a nice glaze, pour it over the salmon, then serve.

@NativePortlander1970 mm sounds good 🤤 im going to try to sear it with lemon pepper, then make a butter/lemon/garlic sauce and a side of broccoli. the recipe said to add honey to the sauce but idk how i feel about that
@Frostcloud Honey will give it a good glaze :) It's very good, I have had fish haters ask me to make it all the time :)

@NativePortlander1970 hmmm well maybe ill add it then!! it just sounded so jarring. but my roommate isnt a big fish fan so maybe he'll enjoy it more if i add that
@Frostcloud He should, fish is a funny dish, people often say they hate it without trying it first, or someone in their past made it badly.

@NativePortlander1970 i was a big fish hater when i was a kid because i thought it was weird. now im grown and its sooooo good but the recipe matters and ive veen intimidaged to cook it myself
@Frostcloud I didn't like it as a kid either, I mean I did like fish and chips, but my maternal grandmother and my mother's older sister over cooked it in a skillet and made it tough, my paternal Grandfather showed me how to cook it properly when I got back to Oregon when I was 18, we never had fish much before we went to iowa when I was ten because my mother hates fish, probably because of how badly her mother cooked it.
