Loss of farmland to solar voltaic? it’s a problem! solutions? Please advise!

A bit of background. Here in upstate New York there has been considerable development of solar projects such projects cover farmland in solar panels on stands. This reduces the amount of land available for agriculture. Less produce and grazing land increases food prices. Less supply same demand.
Anyway I’ve been proposing the following solution since a project I did in sophomore year of college.
Farmland (soil) is needed for food production. Farmland is in short supply (in New York State so is electricity(seasonally).
Humans continue to build buildings reducing the amount of arable land while increasing demand for electricity.
Solution cover existing structures with solar panels; preserve undeveloped land for farming. SOLAR ROOFS!
Duh! Also SOLAR ROADWAYS.
Food prices are continuing to increase because of less arable land. Farmland is being converted to solar farms at an increasing rate. We need more food more than we need more electricity.
Humanity survived for millennia without any electricity. Generally civilization collapse entirely without food within 40 years.
Priorities priorities
An additional solution is converting land between highways into farmland and/or renewable energy generation.
The world needs new approaches it’s not an either or it’s a meet both needs without compromising on either.

There is entirely too much farmland already. We're cutting down rainforests for farmland we don't need. Most of what we farm is food for the livestock we eat. And some farms are paid by the governments not to farm. As for some farms out there, we're 60 years away from the soil not being able to grow anything at all. I hate to say it. but going Vegan is the way forward. Since human sacrifice is sadly not an option.

Amazon always uses farmland for its new facilities. We should have other choices, but we're like Amazon, just conservative. And we don't have opposition, so farmland it will be.

@Roundandroundwego Amazon needs to be more mindful? Idk there are supposed to be environmental impact studies prior to construction maybe just cover Amazon warehouses in solar and wind generation; at least partially

@jehova the generating plants have scubbers to remove soot. By govt regulations.

@Patriot96 ah well at least it’s “cleaner” it’s still inefficiency and antiquated Product in, coal/wood/fuel, etc., cost to acquire; whereas wind water sunlight cost nothing thus once initial investment pays itself off prices could level off (hence renewable) due to supply shortages increasing transportation cost and incineration as a source of energy leads to shortages & price increase. Simple economics
