How do you prefer you sausages?

I did try Chinese Sausage two days ago. It's called Lap Cheong. It's dried, full of big pieces of soft pork fat, and tastes like pineapple. I had to remove the casing, slice it, and render out the fat before I could use it, because the fat was grossing me out.

But I do like almost all sausages. Carando makes a very nice hot dried Spanish chorizo sausage, but I can only get it through the mail. I use pepperoni now as a substitute in my soups, because it is the only dried spicy sausage available in this area.

Mostly, I use hot Italian sausage in my dishes. Here's one: You cook the fat out first, then you slice the sausages and re-fry the slices with onions, peppers, and mushrooms and serve that over rice. Alfresco makes a nice garlic chicken sausage, and a tomato basil sausage I enjoy.

@4meAndyou yo uhave to just bake it really good with those things till the fat is rendered nice and brown!

that sucks :( that sucks :( i disliek it in my soup you should do it some dried sausage on their own or on a baguette!

A mild and sweet Kielbasa is my fav served alongside seafood bakes, or in a hot dog bun topped with chili beans

& I loveee Italian sausage in Asian noodle dishes.

@popmol You could make it without a casing machine. Just make them into sausage patties. It's really good to make your own sausage. Yum.

@JBird if you read on in the article they mention soy and tofu sausages.

@basilfawlty89 they said sausage should be encased in a 'skin', even if sausage filling is just veggies the outer casing is of animal product. Or you can make tofu or cottage cheese of sausage shape but it's not really sausage.
