are we altering the evolutionary growth of grass by mowing and watering our lawns?

In the future, will grass only grow so high because of hundreds or thousands of years of us beating it down with blades?

No. The more you trim, the more lush it grows.
And grass was only ever meant to be so high.
Animals eat grass and cut it shorter than we do,grass will be fine.
