In terms of amino acids and vitamins?
Or in terms of texture and flavor?
For texture & flavor I recommend Impossible Sausage or Beyond Sausage. We've used them both in our lasagna recipes and they taste great.
For nutrition, just google for full protein vegetarian.

Carbs are a bad meat substitute.
When I was a vegetarian I used:
* Wheat gluten, like seitan. One can flavor it to taste like meat bits. Or a commercial version like Quorn, and so on.
* Tofu. I hated it.
* Beans. Cooking them with nuts helped, like ground not stew.
* Cheese. A good roasted or grilled cheese is fun, especially if it has alot of body. Or like a good stinky cheese on crackers or bread. Fresh mozzarella.

My philosophy is don't try to fake meat; just go with other things. I like Indian cuisine because they have a tradition in vegetarianism. I like lentils, peas, and curries.

I use tofu if I don't feel like eating something as heavy as meat. I usually soak in my famous teriyaki sauce and eat it like a burger. Either in a hamburger bun, or between a pair of portabella mushrooms.

pretty much any grain and bean combo, like beans and brown rice, or beans and whole wheat bread. you get all the aminos and a ton of nutrients and fiber.
