What’s the best thing you make with leftover turkey?

I used to chop it up, steam it a bit to soften it up and then add barbecue sauce. Makes great sandwiches, and smoked turkey is even better this way.

Probably my turkey and rice soup. But I used to make turkey croquettes, a long time ago, and those were awesome. Turkey Tetrazzini is also very good.

@4meAndyou turkey croquettes are good. We made a turkey dinner before Thanksgiving in home ec in 10th grade. The teacher asked us what we wanted to make with leftovers...most of us said sandwiches or turkey salad. She insisted (after asking) that we make turkey tetrazzini. No one wanted to but we made it and no one was happy eating it. Never again.

@cherokeepatti She probably didn't let you use white wine or sherry. Without the addition of the white wine, it's very flat.

@4meAndyou the white sauce on turkey is yuck. It’s like white gravy. And no we didn’t have any wine in it.

@cherokeepatti Did you put parmesan cheese in it? It is supposed to be a delicious sauce of butter, mushrooms, white wine or sherry, garlic, and parmesan cheese. Some people just add sour cream to finish it.

@4meAndyou I don’t remember, all I know is that I won’t ever make it again. We were sitting at the tables in home ec like someone had died looking at it and trying to eat it. It was that bad. And we used the home ec teacher’s recipe. I had to wonder how many other classes before and after our that she forced that recipe on.

@cherokeepatti I think some people's taste is very bland. My own mother refused to use spices. Salt, pepper and cinnamon...that was it.

@4meAndyou Yeah I have some old cookbooks and not as many spices were used back in the 30’s and 40’s like now.

@cherokeepatti My mother hated flavors like garlic and didn't know what hot or spicy food was. She grew up in far western Nebraska, and those were the only spices her mother ever used...but her mother, at least, knew how to fry chicken and was generous with the black pepper.

@waleskinder My grandmother lived on a farm. Chickens were killed when they wanted fried chicken, and my grandmother used to grow tender leaf lettuce in the garden to make wilted lettuce salad for my grandfather. They used their own potatoes, but they bought bacon. They didn't do their own curing.

@waleskinder oh it was. Veggies picked in the garden and cooked and served within an hour, a natural sweetness to them. No additives and the meat very fresh.
