Gender fluidity is a subjective idea. What gender somebody is and whether or not they're gender fluid is up to the individual to decide. What people definitely don't like though is being told: listen, I know what you are more than you do.

Because we're not? That would mean that cis genders are not a thing. Most people live their lives completely comfortable in their gender, don't ever feel the need to question it.

I think the idea of gender being binary is so ingrained into the culture that many people have grown up with, that they see it as black and white. You are a man or a woman and that is decided by your genitals (nevermind that intersex people are more common than redheads). So, to suggest the opposite is true, sounds absurd.
