Elvis pot roast?

The Elvis cookbook calls for you to fry it in shortening. Anyone ever done this? I believe shortening was used a lot in the old days. Bet it was better.

That is the method used to brown and sear the surfaces before putting into the oven to help keep the juices inside, according to old theory. Alton Brown debunked it in one of his Good Eats episodes, and I think Mythbusters did too.

I use it on special occasions and I have made roasts like that. It makes the inside very moist and the meat just melts away in your mouth.
It was better and I’m using it again. I don’t eat lard and shortening every day - not even every week.

There are differing opinions but it is slowly being decided that completely omitting bad fat from your diet may have little to no impact on your cholesterol levels.
