Because they are usually more mature than guys in their early 20's, and they're more likely to know what they want. I had a couple of crushes on guys in their early 30's when I was 20, so I can relate.

The early 30s is the averaged most desired age among all women. So, pretty natural.

Coincidentally, the most desired age among all males is 22-27.

So, were you to go with a guy at that age, you'd both be at peak sexual value.
