What do you think is the best way to most accurately know who a person REALLY is?

I like to hit people with a difficult question out of nowhere(I first encountered this while watching the TV show "The Mentalist"), but, without getting that involved, I simply let someone talk. A great lyricist once said, "You can tell a man from what he has to say," and I quite agree.
