Question about plant Chemotypes and Chemical Polymorphism

I know that the chemical composition of essential oils changes within the same botanical species of plants grown either coastal or inland but why? Is this solely because of climate or soil PH? I am particularly interested in the Chemotypes of Rosemary and Thyme.
