The more intriguing point is mine: if a set of atoms are assembled into what looks, feels, smells tastes like REAL meat...is that fine for vegans or not? There should be no problem.

You mean if nothing died to produce the meat? Some people would be okay with that. It would depend on why you were eating vegan.

So I'd go with no. The "inputs" might be vegan, but all matter is made up of just over 100 different chemical elements (and anything you will actually find around will be made up of only the first 92), which are not inherently vegan or non-vegan, but are the building blocks of either.
