Blood is definitely essential to humans. But why is it essential to god?

And why does god accept and even demand that the blood of innocent animals be spilt? How is that an honourable sacrifice by a human?
@Pikachu God considered animals to be clean and unclean. He required clean sacrifices because the aroma pleased him and with our sacrifice showed obedience which also pleased God.
