What do all these wierd gender pronouns actually mean?

Why does a 'normal' woman even need to use 'she/her' (likewise a normal guy use 'he/him')?
Why is there not an automatic presumption that a man is a man and a woman is a woman and there's generally no variance because of DNA coding?
A man is a 'he' by default. A woman is a 'she' by default. None of the others are needed.
One of my managers at work blasts 'she/her' all over her email signatures so I now use 'hard/worker/bloke/man' in my internal emails.
