Sunday was the usual cooking, eating, drinking, video watching day. Made onion bhajias, an apple topped cheesecake, chocolate fairy cakes, jam tarts, and chicken baked with onions and potatoes.
By 21:00 I was feeling so sleepy that I decided to go to bed. Over four hours later I'm still not asleep so I've given up tossing and turning and decided to write the day's blog entry.
The fairy cakes were made with a really simple recipe adapted from this one:
I like it because it's the first such recipe that I have found that uses oil instead of fat that actually works. And there is none of the usual fuss about adding ingredients one at a time. Just put everything in a bowl and stir until combined, no need to whisk the eggs, no need to soften butter or cream it with sugar.
We don't have self raising flour in Norway so I use 120 g plain flour with 5 g baking powder (see https://www.kingarthurflour.com/recipes/homemade-self-rising-flour-recipe).
But the principal change is that instead of caster sugar I used powdered instant drinking chocolate. I have a couple of packets of instant drinking chocolate mix that have been hanging around unused for ages and they are mostly sugar so this is a convenient way to use them up.
I don't use cupcake cases either because I have a 12 cup silicone mould

INGREDIENTS
125g vegetable oil
125g caster sugar
2 eggs
125g self-raising flour
2 tablespoons milk
METHOD
Preheat your oven to 190C / 325F / gas mark 5. Grease 12 cupcake cases.
In a mixing bowl, sieve the sugar and add in the oil. Next add the eggs, milk and finally the flour before stirring well. Spoon the mixture into your cupcake cases and place in the oven for 12 minutes or until risen and slightly golden on top.
