Did 20 minutes on the elliptical trainer this morning!

The usual busy Sunday, cooking, eating, drinking. We watched the first three episodes of The Thick Of It.

Made according to this recipe that I transcribed from a YouTube video. I have no idea why it is called Danish cake, the author of the video is German, I think.

Te recipe calls for a 20 cm diameter loose bottomed tin but I haven't got one so I used a fixed 18 cm diameter one. I think that worked quite well. I baked it for forty minutes.



Ingredients for 20 cm diameter tin:
Filling
100 g almonds
100 g walnuts
50 g sugar
30 g softened butter or margarine (for the nut filling)

Dough
70 g butter (for the dough)
70 g sugar
1 pinch of salt
10 g vanilla sugar
2 eggs
120 g sour cream
170 g flour
7 g baking powder

Method

Filling:
- Grind nuts in food processor to breadcrumb size
- add sugar
- add softened butter
- mix with a spoon until well combined
- set aside

Dough
- Beat butter, sugar, pinch of salt, vanilla sugar until fluffy Use an electric mixer.
- Add eggs one at a time, beat until smooth.
- Add sour cream
- Mix the flour with the baking powder
- Add the flour mixture to the wet mixture.
- Mix gently with a spoon or spatula until it is all combined and smooth
- Line a 20 cm tin with paper. A loose bottom tin is best.
- place half the dough in the tin and spread it out flat
- cover with the nut mixture, set aside a few spoonsful for topping
- add the rest of the dough carefully and spread it flat.
- sprinkle the remaining nuts on top
- bake in a preheated oven at 180 C for 35 to 40 minutes
