I remember I was still in my teens when my father decided he just had to lose weight. He had to go on active duty, and he was getting too fat for his uniform.
My mother owned a cookbook at that time, (which she never used). It had been rotting on the shelf ever since I could remember, but when I volunteered to cook for my father she said she would wash the dishes, and she showed me the cookbook.
I remember that the woman who wrote the cookbook said that in order to lose weight she had to GO into the kitchen and really start cooking. She developed ways of making all her favorite dishes but took the calories and fat out of it.
I was impressed by that philosophy, and you might enjoy some of the dishes she developed. Her name was Barbara Gibbons. She wrote The Slim Gourmet and the International Slim Gourmet. My mother's copy was stolen by a Minister's wife with whom I used to work, so I know first hand they are still available on Ebay.
