Made my rainy day curry today

It's a Japanese sweet and savoury curry with honey, soy sauce, grated apple and ginger. I make and toast the spice blend myself. Prepared some lapsang tea which smells like bonfires, my favourite smell. It's tea leaves smoked over pinewood.

Mind sharing the recipe? Also, I love the concept and smell of that tea, but don't often want to actually drink it.

Blend is:

2 tbsp turmeric powder
3 tsp ground coriander
2 tsp ground cumin
1 1/2 tsp ground fenugreek
1 tsp ground black pepper
1 tsp ground cinnamon
1 tsp ground ginger
1 tsp garlic powder
1 tsp ground nutmeg
1 tsp ground fennel
1 tsp ground star anise
1 tsp ground cardamom
1/2 tsp ground cloves
1 TSP cayenne

Toast in a pan and blend, make a roux with butter and flour and refrigerate.

Recipe: white onion
Carrots
Potato
2-4 chicken breast or equivalent
Chicken stock fresh or 2x liquid premade
4 cloves garlic
Lots of ginger

Slowly cook down the onion, add garlic and ginger near the end. Add in your chicken stock carrots and potato, let it simmer until it softens.

Add 2 tbsp kikkikomen soy sauce, 2 tbsp of honey, tomato puree or ketchup, stir in. Add in your chicken and roux and it will thicken. Leave to simmer with a grated apple.

Add honey salt or apple to taste and have it over rice
