What are some fun things to do with the wife?

She will be going out of town for a week on business and I would like to take her somewhere fun on my days off before she leaves.

She loves going on trips to the casino and stay in hotels but I would like to plan something different that we have not done before. Also she is not a big beach person so casino and beach off the list lol.

Have any ideas of what to do or where to take her? Something involved staying in a hotel for a couple days?
