How do I handle this?

This girl I recently started dating is still in regular contact with an ex boyfriend. I don't like it and have said as much now she is mad at me.

What should I do?

I can understand how you don't like it many would fee the same. Take it deeper..........She is a nice person who doesn't hold grudges and things didn't work out between her and her ex. No reason why they need to end a perfectly good friendship. That's the kind of person who will also treat you right.
